I've already been to town to run errands and I'm back home to stay. As I drove past our little farmer's market downtown I wondered if they might have green tomatoes.... so I turned around and went back. They did! I've never made fried green tomatoes but I'm going to give it a try tonight. On Facebook a few days ago I posted a picture of the fried green tomato caprese` salad at Cherokee Yacht Club. It was delicious! It had fresh ripe tomatoes along with the fried green tomatoes and baby mozzarella cheese with a green goddess dressing. That's going to be my inspiration for tonight.
Our heat wave continues so I'm thinking of how to cook without heating the kitchen so I think I'm going to make some ribs in the crock pot to go along with the fresh salad I'm making. It all sounds good to me!
Last night I tried to tackle one of my cooking hang-ups. Pie crust. Yes, believe it or not I struggle with pie crusts. I don't have that gift of intuition when it comes to that. Do you par bake? Poke holes? Don't poke holes? What if it shrinks? burns? etc..
I made a quiche and it was yummy but it came out very ugly so I need to work on it again before it's blog worthy. Meanwhile I have a piece of advice for you all. If you bake something and it turns out ugly. Just call it "rustic" and it's all good. My quiche was very rustic. ;)
