Salmon Spread is usually one of those recipes I make around Christmas time. A couple of weeks ago one of my friends mentioned that she sure would like some it and it got me to thinking why do I consider this a Christmas snack? That's silly! I have always eaten this with crackers but she said that it's also very good on celery.
I've had this recipe so long that it calls for cans of salmon. I'm here to tell you I didn't make it but once that way. It was disgusting. From that point on I would buy a slab of smoked salmon and make this, which almost seems sacrilegious! I am ever-so-thankful that you can purchase salmon in these little packs now.
The problem is, it doesn't give you very much. So for this recipe I ended up using 3 packages of smoked salmon.
Here's what you need:
2 boxes of cream cheese
3 3 oz. packages of smoked salmon
1/2 lemon, juiced (or 2 Tablespoons)
1 teaspoon of liquid smoke
2 teaspoons of prepared horseradish
I like to mix the cream cheese and all of the ingredients except for the salmon to ensure it is all mixed well, then add the salmon last.
This is good when you make it but it really is better if you let it sit for a few hours or overnight.
Be sure to seal it up and refrigerate! You may have visitors come to check out what smells so good!
