I have a new obsession. Now that summer is over I've discovered that you can still get the most incredible flavor from store bought tomatoes. I was making pizza the other night and was thinking about toppings.. I really just wanted a simple pizza: tomato, basil, and Mozzeralla. So, I got some tomatoes and slowly roasted them. They were YUM-MY!
But last night I was making a pasta dish and I was in a hurry so I "fast roasted" them. Ha! It turned out just as well.
You can use any tomato you like. Our tomatoes in our store looked.. a little anemic. The romas were as hard as a rock. But these little caprese tomatoes looked nice and red. They're the tomatoes that are still on the vine. They are bigger than cherry tomatoes but smaller than roma tomatoes. So slice those babies up and put them on a cooking sheet.
Drizzle a little olive oil across the tomatoes, some coarse salt, pepper, and I used a little bit of crushed rosemary.
If you have time put them in the oven on 200 degrees and then roast for about an hour or so.
Now.... I'm not gonna lie. They're mushy when they're done. But they have the BEST flavor. This is perfect for a pizza topping or for a pasta dish.

Life on the lake is laid back. When we cook it's far from being fancy affair. It's all about relaxing with friends and family and enjoying comfort food. More often than not it's not all that healthy but boy it sure is good!!!
