This is my new favorite crock pot recipe! It's a Pinterest find!
I made this for my son before I left his apartment Sunday. I had never made it before but thought if he liked the recipe it would be something easy for him to make again another time. That night he sent me a text and said it was great!
So Monday I decided to try it out for myself!
In a crockpot (I always use a liner for easy cleaning)
1 1/2- 2 pounds of sirloin (either tips, or strips)
1 large can of enchilada sauce (I used mild)
2 beef bullion cubes (or 2 tsp. of bullion paste)
1 large can of refried beans (it thickens the sauce)
And THAT'S IT!! Just cook it on low for 6 hours. And when it's done you can eat it with some tortillas and shredded cheese.
This is the perfect weather for this kind of recipe!
Life on the lake is laid back. When we cook it's far from being fancy affair. It's all about relaxing with friends and family and enjoying comfort food. More often than not it's not all that healthy but boy it sure is good!!!
